Baking Powder
1 teaspoon: 1/2 teaspoon cream of tartar + 1/4 teaspoon baking
soda
Beer
Apple juice or beef broth
(Note this won't work if beer is used as a leavening, as in beer
bread.)
Buttermilk
1 teaspoon lemon juice or vinegar plus milk to make 1 cup; let
stand for 5 minutes
Cornstarch
1 tablespoon: 2 tablespoons all-purpose flour or 1 tablespoon
potato flour
Dates
Equal amounts of raisins, prunes, currants, or dried cherries
Flour
For cake flour: 1 cup minus 2 tablespoons all-purpose flour
Self-Rising Flour
1 cup: 1 teaspoon baking powder + 1/4 teaspoon sea salt + enough
all-purpose flour to equal 1 cup
Leeks
Red or green onion, or shallots
Lemon Juice
2 teaspoon: 1 teaspoon cider or white vinegar
Prunes
Dates, raisins, or currants
Red Pepper Sauce
4 drops: 1/8 teaspoon ground red cayenne pepper
Sour Cream
Plain nonfat yogurt
Tomato Products
1 cup juice: 1/2 cup sauce + 1/2 cup water
1/2 cup paste: simmer 1 cup sauce until reduced to 1/2 cup
2 cups sauce: 3/4 cup paste + 1 1/4 cups water
(Mix 2 parts Maple
Leaf or organic tomato powder with 1 part water to make
tomato paste; mix an equal amout of Maple
Leaf or organic
tomato powder with water to make tomato sauce.)
Wine, Red
