Low Carb Lemon-Almond Flour Pound Cake
This recipes uses Whey Low granular*, which is an all natural, low-glycemic, reduced calorie one-to-one sugar replacement; you can read more about it here. At only 3.13 effective carbs, a slice of this cake is the ideal low-carb breakfast Danish alternative or dessert.
Serves 12

Ingredients:
4 ounces cream cheese, softened
1/2 stick butter (w/salt), softened
1/2 cup Whey Low granular
1 large egg yolk
2 large eggs
1/2 tsp. vanilla extract
1/2 tsp. lemon extract or several drops of lemon oil
Pinch sea salt
1 cup almond flour/almond meal
1/2 tsp. low-salt baking powder

Instructions:

Preheat oven to 325°F.

In a mixing bowl, cream together the cream cheese and butter until well blended. Whisk in the Whey Low granular, eggs, vanilla, and lemon. Add the almond meal and baking powder and stir to combine.

Transfer to a buttered loaf pan and bake for 45 minutes, or until a toothpick inserted in the center comes out dry.
