This company makes an indoor smoker designed to be used on the stovetop over medium heat. It comes with an assortment of finely chopped wood chips (in resealable plastic containers). Unlike how wood chips are used in an outdoor grill or smoker, with this unit wood chips are kept dry. You only use a pinch of the chips, placed in the center of the smoker base and under the drip tray. Food is placed on a rack so that any fat cooked out of the meat drains away and also so that the air (smoke) can circulate around the food. The flat, roaster-style smoker pan has a tight-sealing lid so the smoke is kept inside the pan. (It's still advisable to use this fan in combination with a good exhaust fan.)
Fish fillets cook in about 15 to 20 minutes in the Camerons® Stovetop Smoker, so it provides an easy way to enjoy the flavor of smoked meat without the high sodium content of most commercially prepared versions. Thick slices of pork loin cook within that time as well. When prepared using the hickory chips, it makes a delicious lower fat, low salt substitute for bacon.

 

The pan that comes with this smoker can also be used as a roaster or a stovetop steamer or poacher.
