Quickies
Easy Eggs Benedict

Toast a slice of 7-Grain Oat Bran Bread. Top with a thin slice of smoked salmon, a poached egg, and a mock hollandaise sauce made by stirring a little lemon juice into plain nonfat yogurt.

Cheddar Chicken Waffle

Preheat oven to 350ºF. Place waffle on a nonstick baking sheet. For each waffle, beat 1 egg together with 1 teaspoon of Hellmann's Real Mayonnaise,

1 tablespoon milk, and a dash of sea salt. Pour over the waffle, allowing the egg mixture to "puddle" in the waffle "groves." Arrange thin slices of cooked chicken breast over the egg and top with grated cheddar cheese. Bake for 15 minutes, or until cheese is melted. Slide onto a plate and serve.

Monte Cristo Waffle

Preheat oven to 350ºF. Place waffle on a nonstick baking sheet. For each waffle, beat 1 egg together with 1 teaspoon of Hellmann's Real Mayonnaise,

1 tablespoon milk, a little Dijon mustard, and a dash of sea salt. Pour over the waffle, allowing the egg mixture to "puddle" in the waffle "groves." Arrange thin slices of ham over the egg and top with baby Swiss cheese. Bake for 15 minutes, or until cheese is melted. Slide onto a plate and serve.
Or even better:

Have your granddaughter serve it to you!
