Jarlsberg Cheese and Sautéed Onion Canapés
with apple

Consider baking your own healthful (or low-carb) bread in these canapé molds. If you do, you can cut the crustless results a bit thicker than party rye and make an indentation in the center of each to form "tartlet"-style platforms for your toppings. Alternatively, you can stack slices of party rye and use one of the canapé molds to cut the bread into bite-sized, crustless canapé pieces.
Ingredients:

1 tablespoon butter
1 medium onion, cut into fourths and sliced
4 ounces thinly sliced Jarlsberg or Swiss cheese
16 slices pumpernickel cocktail bread
1 tablespoon mayonnaise
Dijon mustard to taste
1 to 2 tablespoons chopped fresh chives
1 medium apple, cored, peeled, and thinly sliced

1. Heat oven to 400°F.
2. Melt butter in 10-inch skillet over medium heat. Cook onion in butter 4 to 6 minutes, stirring occasionally, until tender.
2. Cut cheese to fit bread. Spread each bread slice with Dijon mustard and mayonnaise -- or blend the Dijon mustard with the mayonnaise instead of spreading them separately. Next top each slice of bread with onion, apple, and cheese. Sprinkle with chives. Place on an ungreased baking pan.
3. Bake for about 5 minutes -- or until cheese is melted. (Keep in mind that the longer you bake these canapés, the crisper the bread will get. If you prefer soft bread, you can melt the cheese by placing the pan under the broiler. Just be sure to watch the process because under the broiler, cheese can go from melted and bubbly to burnt within seconds.)  Serve warm.

Canapés are small, decorative pieces of bread topped with a savory garnish. Serve them hot or cold, with bread toasted or not. The topping can be a simple spread or an elaborate collection of ingredients.
