Indoor Grilling:
Quick & Easy Indoor Grilled (or Stovetop) Steak

on a Chronic Fatigue Syndrome Forum and adapted it to fit her food restrictions and energy levels. Her simple, but good, steak recipe works well for somebody who has difficulty standing up to work. In fact, this steak can just as easily be fried in an electric skillet placed on a table, while the "chef" is seated adjacent to the skillet. Likewise, it could be prepared on a countertop grill like the Cuisinart Griddler -- which works well for boneless cuts, but because of the hinged lid, unlike a George Foreman-style grill, works equally well for bone-in steaks.

INGREDIENTS:

  • 8-ounce strip steak
  • 2 teaspoons olive oil
  • Worcestershire sauce
  • Kosher or sea salt
  • Dried minced garlic
  • Freshly ground black pepper
  • 1 tablespoon Canola or olive oil (optional)
 

 
Instructions:

Rub both sides of the steak with the olive oil. Sprinkle Worcestershire sauce, salt, dried minced garlic, and pepper over the top of the steak, to taste. Cover and let marinate at room temperature for a half hour to an hour.

(Note: Worcestershire sauce is salty, so go lightly on the salt at this step. One suggestion is to skip the salt entirely, and then season to taste with a light sprinkling of gray sea salt after the steak is cooked.)

Bring a well-seasoned, cast-iron skillet to temperature over medium-high heat. Add tablespoon of canola or olive oil to skillet, if desired.

Place steak preseasoned-side down in the heated skillet. Fry for 4 minutes, and then turn and continue to cook it for an additional 1 or 2 minutes, until desired doneness. (This should cook the steak to medium. Keep in mind that there will be some "carry-over cooking" once the steak is removed from the pan to the plate.)

NOTE: If you set it on high to sear the meat, the total cooking time on the Cuisinart Griddler only will be about 3-4 minutes.

Allow to rest on the plate for several minutes, and then serve immediately.

Additional note: For a more highly flavored steak, season both sides with the Worcestershire sauce, minced garlic, and pepper.
