Ina's newest book features a Blueberry Crumble recipe, so I
thought this example from her
Barefoot Contessa Family Style would be a good
illustration of how she presents her delicious recipes:
Blueberry Coffee Cake Muffins
12 tablespoons (1 1/2 sticks) unsalted butter, at room
temperature
1 1/2 cups sugar
3 extra-large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
8 ounces (about 1 cup) sour cream
1/4 cup milk
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 half-pints fresh blueberries, picked through for stems
Preheat the oven to 350 degrees F. Place 16 paper liners in
muffin pans.
In the bowl of an electric mixer fitted with the paddle
attachment, cream the butter and sugar until light and fluffy,
about 5 minutes. With the mixer on low speed, add the eggs 1 at
a time, then add the vanilla, sour cream, and milk. In a
separate bowl, sift together the flour, baking powder, baking
soda, and salt. With the mixer on low speed add the flour
mixture to the batter and beat until just mixed. Fold in the
blueberries with a spatula and be sure the batter is completely
mixed.
Scoop the batter into the prepared muffin pans, filling each cup
just over the top, and bake for 25 to 30 minutes, until the
muffins are lightly browned on top and a cake tester comes out
clean.

show, Chef Devan Alexander has adapted those recipes that has
helped so many participants (and viewers) shed unwanted pounds.
An example from the book:
Better Blueberry Pancakes
Makes 2 (4-pancake) servings

1/2 cup reduced-fat buttermilk
1/2 cup whole-grain oat flour
1 large egg white, lightly beaten
1/2 teaspoon baking soda
1/4 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup fresh or frozen (not thawed) blueberries
I Can't Believe It's Not Butter! spray
Sugar-free, low-calorie pancake syrup (optional)
100% fruit orange marmalade spread (optional)
Preheat the oven to 200 degrees.
In a small bowl, combine the buttermilk, flour, egg white,
baking soda, vanilla and salt. Whisk just until blended. Stir in
the blueberries. Let stand for 10 minutes.
Heat a large nonstick skillet over medium heat until it is
hot enough for a spritz of water to sizzle on it. With an oven
mitt, briefly remove the pan from the heat to mist lightly with
I Can't Believe It's Not Butter! cooking spray. Return the pan
to the heat. Pour the batter in 1/8-cup dollops onto the skillet
to form 3 or 4 pancakes. Cook for about 2 minutes, or until
bubbles appear on the tops and the bottoms are golden brown.
Flip. Cook for about 2 minutes, or until browned on the bottom.
Transfer to an oven-proof plate. Cover with aluminum foil. Place
in the oven to keep warm. Repeat with cooking spray and the
remaining batter to make 8 pancakes total.
Place 4 pancakes on each of 2 serving plates. Serve
immediately with I Can't Believe It's Not Butter! spray, syrup,
and/or fruit spread, if desired.
