Spicy chicken goujons 3
boneless, skinless chicken breasts
all-purpose flour, for coating
vegetable oil, for deep-frying
1/2 tsp. ground turmeric
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. chili powder |

Cut the chicken breast into
thin strips and toss in all-purpose flour, shaking off the excess.
Fill a deep, heavy-bottomed pan one-third full of oil and heat to
350°F or until a cube of bread dropped into the oil browns in 15
seconds. Cook the goujons for 3 minutes or until golden. Drain on
crumbled paper towels and keep warm.
Mix together the turmeric, coriander, cumin, chili powder, and 1
teaspoon salt (editor note: or sea salt to taste). Toss the goujons
in the mixture, shaking off the excess.

Fortune cookies: 3 egg whites
1/2 cup confectioners' sugar, sifted
3 tablespoons unsalted butter, melted
1/2 cup all-purpose flour
Preheat the oven to 350°F. Lightly grease a
baking sheet. Draw three 3-inch circles on a sheet of baking
parchment, |

turn over, and use to
line the baking sheet. Place the egg whites in a clean, dry bowl
and whisk until just frothy. Add the confectioners' sugar and butter
and stir until smooth. Add the flour, mix until smooth, and leave
for 15 minutes. Using a flat-bladed knife, spread 2 level teaspoons
of mixture over each circle. Bake for 5 minutes or until the cookies
are slightly brown around the edges.
Working quickly, remove the cookies from the baking sheets by
sliding a flat-bladed knife under each one. Place a written fortune
cookie in each cookie. Fold in half, then in half again over the
edge of a bowl. Keep a dishcloth handy to use when folding the
cookies. The baking sheet is hot and you need to work fast, so be
careful not to burn your hands. Cool on a wire rack. Cook the
remaining mixture the same way. Make two or three cookies at a time;
otherwise they will harden too quickly and break when folding.
