NOTE:
One of the easiest ways to add rich flavor to the condensed soup or casserole recipes without adding extra calories is to use 1/8 to 1/4 teaspoon of other Minor's bases, like Roasted Mirepoix, Onion, or Garlic. Bases are a much healthier way to create quick broths than the traditional method of using bullion cubes. Because broth bases must be refrigerated, they contain far less sodium. NOTE:
Leftover Molded Chicken Salad (recipe in this chapter) makes great sandwiches. Put it and lots of lettuce between two slices of bread and you have a quick lunch. The lettuce helps keep the bread from getting soggy if you're preparing the sandwich "to go."
TIP: Steamed mushrooms are a low-calorie way to add flavor to a dish and "stretch" the meat. If you don't like mushrooms, you can substitute an equal amount of other low-calorie steamed vegetables like red and green peppers and not significantly affect the total calories in the recipe.

    Sample Recipe: Pork Broth: Easy Crock-Pot Method
NOTE:
This recipe is an adaptation of the "Pork Broth" recipe shown on page 161 in the book; the cooked pork that results from this recipe is used in two recipes in this chapter: Slow-Cooker Pork with Plum Sauce and Warm Pork Salad. Therefore, I'm featuring the omitted recipe.

Chapter 10 Pasta and Pizza
    Sample Recipe: English Muffin Pizza
Top each half of an English muffin with your choice of tomato sauce. Add chopped, free-choice vegetables. Divide 1 ounce of grated mozzarella cheese between the muffin halves. Bake in a 400-degree oven until the cheese bubbles, and you have a meal with 2 Carbohydrate/Starch Exchanges and 1 Medium-Fat Meat Exchange, plus the Exchange Approximation for your choice of sauce.
