This bread doesn't
quite have the cake-like consistency of King's Hawaiian Bread
(for that wonderful texture, see the Bosch version of this
recipe), but its flavor is reminiscent of that delicious bread,
despite its lighter and airier texture. It's delicious when used
in French toast.
Unless the instructions for your
bread machine differ, add the ingredients in the order given.
Ingredients:
1 egg
1/2 cup unsweetened pineapple juice*
3/4 cup water
2 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon ground ginger
1 1/2 cups unbleached bread flour
2 1/8 cups unbleached all-purpose flour
1/4 cup sugar
1 teaspoon salt
2 tablespoons nonfat dry milk
2 1/2 teaspoons dry yeast
Use the white bread, light crust setting.
For
the pineapple juice, I use 1/8 cup (2 tablespoons) of Dole
frozen 100% pineapple juice concentrate and 3/8 cup (1/4 cup + 2
tablespoons) water.
For
a moister bread that retains its freshness longer, substitute
1/8 cup of Ener-G
potato flour or Maple
Leaf Dried Potato Granules for an equal amount of the flour.
It makes a 2-pound, horizontal loaf, so
your bread looks homemade in addition to tasting that way, too.
I'll admit, I prefer the texture of the homemade bread I make
using my Bosch mixer; however, for those
times you don't have the time to do things completely from scratch
-- or when you want the convenience of adding the ingredients and
setting the timer so your bread is ready when you want it later,
