Maple Leaf 9 Grain Cracked Cereal is a blend of red
wheat, soft white wheat, barley, oats, corn, millet, flax,
hulled barley, and rye. This recipe is also another
example of how easy it is to get absolutely perfect bread with
little effort using a
Bosch Universal mixer!
Ingredients:
3/4 cup
Maple Leaf 9 Grain Cracked Cereal*
1 cup boiling water
1/4 cup water
2 tablespoons
Whey Low**
1 teaspoon honey
1 tablespoon instant yeast
1/2 cup all-purpose flour
1 teaspoon sea salt (3/4 teaspoon if using gray salt)
2 tablespoons extra-virgin olive oil
3 cups all-purpose flour
Place the
Maple Leaf 9 Grain Cracked Cereal in the bowl of the mixer
and pour boiling water over it. Let set for a half hour, or
until temperature of water has reduced to room temperature. Add
the remaining water,
Whey Low, honey, yeast, and flour. Mix on low (1) until
blended. Cover and allow to rest for a half hour to form a
"sponge."***
Add the salt and oil, then mix again on low. Add the
remaining flour and mix on low (1) until blended. Once the dough
begins to pull away from the side of the bowl and form a ball,
increase the mixer speed to medium (2) and "knead" the bread for
5 to 7 minutes.
Preheat the oven to warm.
I've
found that if the mixer vibrates as it's forming the dough ball,
it has too much flour. When that happens, I increase the amount
of water a teaspoon at a time. Lots of things can affect the
amount of flour needed. The bread I make using the
Bosch Universal mixer is a wetter dough than that which
I knead by hand. ... Oddly enough, as I'm kneading the dough, I
can tell when it's been kneaded long enough once the mixer
does
start to vibrate. Without fail, I check it at that point and
it's the glossy, stretchy texture I want. I occasionally have to
oil my hands to handle the dough at this point. With this bread,
I didn't need to do that.
