Ingredients:
1 tablespoon honey
1 1/4 cups skim milk
1 tablespoon olive oil
1 medium egg
1 teaspoon sea salt
2 tablespoons nonfat dry milk
1/2 cup oat bran
1/2 cup whole wheat flour
3/4 cup 7-grain cereal*
2 1/4 cups unbleached bread flour
2 1/2 teaspoons dry yeast
Optional: 1 tablespoon Dough Enhancer or lemon juice
Add the ingredients to your bread machine in the order given (unless instructions for your machine call for otherwise).

A "wet dough" -- one that while it's just beginning to pull away from the
side of the pan still remains sticky to the touch -- works best in a bread machine.
Sure, you'll sometimes get that little twirl you see on the top crust of your bread, but in
my opinion, that's a small price to pay for the better flavor and bread texture.
You can reduce the fat and cholesterol in this bread, plus increase the fiber if you use this egg substitute: Put 1/4 cup water and a tablespoon of ground flax seed in a microwave safe container. Microwave on high for 30 seconds. Stir. (Mixture should have the consistency of egg whites. If not, continue to microwave in 10 second segments until mixture thickens.)
Be careful that salt doesn't come in contact with the yeast. If that happens before the yeast has had a chance to work, salt can kill the action.
Instead of trying for 24 thin slices, the serving size for this bread is easier to achieve if you slice it into 12 thick slices and cut each slice in half.
*7-grain cereal is a mixture of cracked wheat, rye grits, barley grits, millet, cornmeal, flax seed, and oats. The brand I use is organic Country Life Seven Grain Cereal,
